GREEK SALAD

  • 4 medium tomatoes, chopped
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 green bell pepper, chopped
  • 200 grams (about 7 ounces) feta cheese, crumbled
  • Kalamata olives, pitted (as many as desired)
  • Fresh oregano leaves or dried oregano (to taste)
  • 3 tablespoons extra-virgin olive oil
  • 1-2 tablespoons red wine vinegar
  • Salt and black pepper to taste
  1. Chop the tomatoes, dice the cucumber, thinly slice the red onion, and chop the green bell pepper. Crumble the feta cheese. If using whole Kalamata olives, you can pit them if desired.
  2. In a large salad bowl, combine the chopped tomatoes, diced cucumber, sliced red onion, chopped green bell pepper, and crumbled feta cheese. Add the Kalamata olives to the bowl. Sprinkle fresh oregano leaves or dried oregano over the top.
  3. In a separate small bowl, whisk together the extra-virgin olive oil and red wine vinegar to create the dressing. Season the dressing with salt and black pepper to taste. Adjust the vinegar, oil, and seasonings to your preference.
  4. Drizzle the dressing over the salad in the large bowl. Gently toss the salad to combine all the ingredients and evenly coat them with the dressing. Serve your Greek salad immediately as a refreshing and delicious side dish or as a light meal on its own.
