IRISH BEEF STEW

  • 1 pound (approximately 450g) of stewing beef, cubed
  • 2 tbs vegetable oil
  • 1 large onion (chopped)
  • 4 coups (about 1 liter) beef broth
  • 2 bay leaves
  • 2 potatoes, peeled and dicced
  • Salt and black pepper
  • Chopped fresh parsley for garnish (optional)
  1. Brown the beef in a large pot or Dutch oven, heat the vegetable oil over medium-high heat. add the cubed beef and brown it on all sides.
  2. Saute onion, and add the chopped onion to the pot. saute the onion for a few minutes until it start to soften.
  3. Add broth and seasonings, pour in the beef broth to cover the meat and onion. Add bay leaves, salt and black pepper.
  4. Simmer and add vegetables. Reduce the heat to low, cover the pot, and let the stew simmer for about 1-2 hours. After simmering for a while, add the diced potatoes to the stew. Continue simmering until the potatoes are tender.
