MIXED BERRY TIRAMISU

  • 250 grams mixed berries (strawberries, blueberries, and raspberries)
  • 60 grams granulated sugar (about 1/4 cup)
  • 1 tbs lemon juice
  • 225 grams mascarpone cheese (about 1 cup)
  • 1.2 dl heavy cream (1/2 cup)
  • 30 grams powdered sugar (about 1/4 cup)
  • 1 teaspoon vanilla extract
  • 2.4 dl brewed espresso or strong coffee (1 cup)
  • 0.6 dl coffee liqueur (1/4 cup)
  • 1 package (about 200 grams) ladyfingers (savoiardi)
  1. In a saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the berries break down and release their juices, about 5-7 minutes. Remove from heat and let it cool completely.
  2. In a mixing bowl, whisk together the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and well combined. You can use an electric mixer on low speed if desired.
  3. Quickly dip each ladyfinger into a mixture of brewed espresso and coffee liqueur Layer dipped ladyfingers in a serving dish. Spread half of the creamy mixture on top. Spoon half of the berry filling over the creamy layer. Repeat with another layer of dipped ladyfingers, remaining creamy mixture, and the rest of the berry filling.
  4. Cover the tiramisu and refrigerate for at least 2-3 hours, or overnight, to allow the flavors to meld and the dessert to set. Before serving, garnish the tiramisu with additional mixed berries and a dusting of cocoa powder or grated chocolate. Serve chilled and enjoy your simplified mixed berry tiramisu!
