CANNOLI

  • All-purpose flour (240g)
  • Granulated sugar (25g)
  • Salt (1/2 teaspoon)
  • Unsalted butter (25 g)
  • White wine or vinegar (120ml)
  • Vegetable oil (for frying)
  • Ricotta cheese (500g)
  • Powdered sugar (120g)
  • Vanilla extract (1 teaspoon)
  • Mini chocolate chips or chopped pistachios
  1. Make the Dough: In a bowl, combine 240 grams of flour, 25 grams of sugar, and 1/2 teaspoon of salt. Cut in 28 grams of cold butter until the mixture resembles coarse crumbs. Gradually stir in 120 ml of wine or vinegar until a dough forms. Knead briefly, then wrap in plastic and chill for 30 minutes.
  2. Prepare the Shells: Roll out the dough very thinly. Cut into circles and wrap around cannoli tubes. Deep-fry in hot oil (360°F or 180°C) until golden. Cool, then carefully remove the tubes from the shells.
  3. Mak the Filling: Whip 500g of ricotta with 120 grams of powdered sugar and 1 teaspoon of vanilla extract until smooth. Strain if necessary to achieve the desired consistency.
  4. Fill and Serve: Just before serving, pipe the filling into the shells. Optionally, dip the ends in mini chocolate chips or chopped pistachios, and dust with powdered sugar.
