MOCHI

  • Glutinous rice flour (mochiko) (200g)
  • Sugar (100g)
  • Water (200ml)
  • Cornstarch or potato starch (for dusting)
  • Red bean paste (anko)
  • Food coloring
  1. Prepare the Mochi Dough: In a bowl, mix the glutinous rice flour and sugar. Gradually add water and stir until smooth. If you want colored mochi, add a few drops of food coloring.
  2. Cook the Mixture: Pour the mixture into a microwave-safe bowl or steamer. If using a microwave, cover the bowl with plastic wrap and microwave on high for 2 minutes, then stir and microwave for another 2 minutes. If steaming, steam in a steamer for about 20 minutes, or until the dough becomes translucent.
  3. Shape the Mochi: Once the dough is cooked and slightly cooled, dust a surface with cornstarch or potato starch to prevent sticking. Spoon out the dough onto the surface, and sprinkle more starch on top. Flatten the dough and cut into pieces.
  4. Fill and Form the Mochi: If filling the mochi, place a small amount of red bean paste in the center of each piece. Pinch the mochi over the filling to seal it, then roll it into a ball. Dust off excess starch.
