STRAPATSADA (GREEK SCRAMBLED EGGS)

  • Eggs (4)
  • Fresh ripe tomatoes (3, medium-sized)
  • Feta cheese (100g)
  • Olive oil (2 tbs)
  • Onion (1)
  • Green bell pepper (1)
  • Salt
  • Black pepper
  • Dried oregano
  1. Prepare the Tomato Sauce: Heat olive oil in a pan. If using, add chopped onion and bell pepper, sauté until soft. Add the grated tomatoes, salt, and pepper. Cook over medium heat until the mixture thickens, about 10 minutes.
  2. Beat the Eggs: In a bowl, beat the eggs with a pinch of salt and pepper.
  3. Combine Eggs and Tomato Mixture: Pour the beaten eggs over the tomato mixture in the pan. Let them set for a minute before stirring gently to combine.
  4. Add Feta and Serve: Once the eggs are nearly set, sprinkle crumbled feta and oregano over the top. Cook for another minute, then remove from heat. Serve hot with crusty bread.
